These Nutella & Peanut Butter Energy Balls are mouthwatering, nutritious, and super fragrant thanks to almond extract! This is an easy no bake recipe, and these little balls of joy are great for a quick midday snack or dessert!

I am OBSESSED with these Nutella & Peanut Butter Energy Bites right now!

As I mentioned in my last post, I’ve recently moved to a new apartment and have been going gaga setting up everything here. The move itself had to be done in two days – inclusive of going through all the items I own, climbing like a monkey on top of tables to reach all the stuff I had stored in the ceiling height closets and cabinets, throwing and giving away all the things that I don’t use or can only fit one leg into now (yes – I somehow forgot all about those jeans at the very back of my closet that I had purchased when I was 15! 😳), and packing up everything into nine suitcases and 10 boxes!

During those two insane days, I was running around my old apartment like a madwoman. And I honestly believe I only survived all the chaos because of these delicious Nutella & Peanut Butter Energy Balls!

On the Sunday before the move, I made a batch of these wholesome chocolatey balls. And they SERIOUSLY helped me to power through!

HERE’S WHY YOU NEED THESE ENERGY BALLS IN YOUR LIFE STAT:

  • They’re easy to make, 100% low maintenance, and only require three steps! 1. Grind 2. Roll into balls. 3. Freeze or refrigerate until solid. BOOM! 🙌
  • They’re made with all sorts of healthy stuff for the body: oats, honey, flax seeds, and chia seeds. So you’re actually doing yourself some good by eating these. 👌
  • Great for an afternoon snack when you need something small that is healthy (and sweet!) to power through the rest of the workday.
  • Also great for a grab and go light breakfast.
  • They are delicious and can be eaten as dessert too – which is how I am now consuming the rest of the new batch I made this week! 😉
  • One word: NUTELLA!!!!! 😍😍😍
  • Two more words: PEANUT BUTTER!!! 🤤

Chocolate and peanut butter is the best sweet and salty combo in the world in my expert chocolate-and-peanut-butter-inhaler opinion.

HOW TO MAKE THESE LIFE-CHANGING NUTELLA & PEANUT BUTTER ENERGY BALLS:

Throw all the ingredients in a food processorold fashioned rolled oats, chia seeds, flax seeds (either ground or whole), peanut butter, Nutella, salt, almond extract, and honey.

Pulse everything until fully combined and you have a nice coarse textured mixture.

Transfer to a bowl and refrigerate for a couple of minutes to harden the mixture. (This makes it easier to roll into balls and less sticky to deal with.)

Then roll the mixture into balls of your desired size (mine were about 1 – 1.2-inch in diameter, but you can make these smaller or bigger as you like).

Then chill in the refrigerator or freeze in the fridge until solid….and enjoy!

ARE THESE GLUTEN-FREE?

These Nutella & Peanut Butter Energy Balls are also gluten-free if you make them with gluten-free oats like I do (I use Bob’s Red Mill Gluten Free Old Fashion Rolled Oats). Although I don’t have celiac disease, I sometimes prefer not to eat gluten as it makes my stomach feel lighter. You can use regular old fashion rolled oats too if you already have it on hand. They both taste pretty much the same in these energy balls.

Just make sure you use old fashion rolled oats and NOT quick/instant oats!

WHERE TO STORE NUTELLA & PENAUT BUTTER ENERGY BALLS?

I normally store these in the freezer because I’m a fan of frozen treats. But they taste great – not too hard or soft – when you store them in the fridge too. Feel free to take your pick and store in either the freezer or refrigerator.

Ingredients

Scale
  • 2 cups Old Fashioned Rolled Oats (I used Bob’s Red Mill Gluten Free Old Fashion Rolled Oats)
  • 1/4 cup Chia Seeds
  • 1/4 cup Flax Seeds
  • 1/4 cup Creamy Peanut Butter (without sugar or with based on your preference. I used Skippy’s – which has added sugar)
  • 1/2 cup Nutella
  • 1/2 TSP Kosher Salt (use half the amount if using table salt)
  • 1.5 TSP Almond Extract
  • 1 TBLS Honey

Instructions

  1. Combine all ingredients in a food processor and pulse until a course texture is achieved.
  2. Transfer to a bowl, cover, and refrigerate for 30-40 minutes. (Note: this helps to harden the mixture so that it is less sticky and easier to roll into balls.)
  3. Roll into balls of your desired size. (Mine were about 1.2-inch in diameter, but you can make them smaller or larger as you like.)
  4. Chill in the refrigerator or freeze in the freezer for 30-60 minutes until solid. Then enjoy!

Notes

  1. Store in an airtight box/container in the freezer or refrigerator.
  2. You can use more honey or Nutella if you have a really big sweet tooth like me. 😉
