These Nutella & Peanut Butter Energy Balls are mouthwatering, nutritious, and super fragrant thanks to almond extract! This is an easy no bake recipe, and these little balls of joy are great for a quick midday snack or dessert!

Ingredients

  • 2 cups Old Fashioned Rolled Oats (I used Bob’s Red Mill Gluten Free Old Fashion Rolled Oats)
  • 1/4 cup Chia Seeds
  • 1/4 cup Flax Seeds
  • 1/4 cup Creamy Peanut Butter (without sugar or with based on your preference. I used Skippy’s – which has added sugar)
  • 1/2 cup Nutella
  • 1/2 TSP Kosher Salt (use half the amount if using table salt)
  • 1.5 TSP Almond Extract
  • 1 TBLS Honey

Instructions

  1. Combine all ingredients in a food processor and pulse until a course texture is achieved.
  2. Transfer to a bowl, cover, and refrigerate for 30-40 minutes. (Note: this helps to harden the mixture so that it is less sticky and easier to roll into balls.)
  3. Roll into balls of your desired size. (Mine were about 1.2-inch in diameter, but you can make them smaller or larger as you like.)
  4. Chill in the refrigerator or freeze in the freezer for 30-60 minutes until solid. Then enjoy!

Notes

  1. Store in an airtight box/container in the freezer or refrigerator.
  2. You can use more honey or Nutella if you have a really big sweet tooth like me. 😉
