What is Biscoff? Well I’m glad you asked, and very happy to enlighten you if you haven’t tried Biscoff cookies yet.

Lotus Biscoff cookies are delicious caramelized cookies and I am HIGHLY addicted to them. They taste great with a cup of coffee, or on their own, and are one of my absolute favorite midday pick-me-up snacks! Chances are if you’ve flown with Delta Air Lines, you’ve seen and been offered these yummy cookies on the flight. (Please tell me you chose them over Cheez-It?!)

So last year while I was in Singapore at a FairPrice supermarket, I came across a jar of Lotus Biscoff Cookie Butter Spread. I grabbed the jar and excitedly purchased it, unknowing of the fact that the spread would become my daily breakfast on toast for many, many months to come.

Recently, I visited Singapore again and stocked up on jars of this delightful and addictive cookie butter. Since then, I’ve made it my mission in life to create amazing dessert recipes with the spread, and I can’t wait to share them with you guys! 🤗

This frosty Biscoff Apple Milkshake is creamy, caramelly sweet, and sinfully GOOD. What’s more is that it’s crazy easy to make and can be whipped up on a moment’s notice!

WHY THE APPLE?

Simply because they are in season, and the juicy apples available in my local supermarket looked irresistible and delicious this time of the year! Also, as aforementioned, my daily breakfast for a few months included toast smeared with Biscoff spread. Occasionally and when I would have apples on hand, I’d line a few thin slices on top of the yummy cookie butter toast. The slightly tart and rich sweetness from the apples + ridiculously good Biscoff spread on toast combo was lovely, and it’d ALWAYS make my mornings much more happier and bearable. (In case you don’t know already, I am NOT a morning person!)

Right, let’s get on with the recipe so you too can enjoy this milky, decadent, and pleasurable milkshake!

BISCOFF APPLE MILKSHAKE INGREDIENTS

To make this super sweet drink treat, you’ll need just a couple of ingredients.

  • Milk: I use whole milk. I don’t recommend low-fat. (If you’re gonna enjoy a milkshake, why not make it the BEST way you can with regular full fat milk? 😉)
  • Vanilla Ice Cream: I’m partial to Häagen Dazs, but any brand you like will do.
  • Apple: I used a red apple – Mutsu Fuji. But you’re welcome to use Honey Crisp or even Granny Smith if you like the tartness! Any apple you like will do. 👍
  • Lotus Biscoff Spread: Hands down, this is the BEST cookie butter I’ve eaten in my entire life! I prefer to use it than any other brand. If you can’t find it near where you live, you can purchase it online or opt to use any other cookie butter that you can find. Feel free to use either the smooth or crunchy spread. 👌
  • Vanilla Extract: Just a little to enhance all the flavors in this shake!
  • Optional toppings: Biscoff spread drizzle, whipped cream, and crushed Lotus Biscoff cookies.

HOW TO MAKE BISCOFF APPLE MILKSHAKE

To make this rich and indulgent Biscoff Apple Milkshake, simply…

Make the Biscoff spread drizzle: Melt some Biscoff spread in a small bowl for thirty seconds in a microwave. Then drizzle the melted cookie butter spread around the inside edges of two glasses. (This is easy to do with a squeeze bottle.)

Then, dump all the ingredients into a blender jug and blitz it all up until smooth.

Vanilla ice cream, diced red apple, Biscoff spread, milk, and vanilla extract in a blender jug.

Pour the milkshake into glasses, and top with whipped cream, Biscoff spread drizzle, and crushed Lotus Biscoff cookies if you like. Then sit back, and enjoy!

Darn simple right? But SO GOOD. 🤤

CAN I MAKE THIS VEGAN?

Yes! Biscoff spread and cookies are vegan. Use almond or any non-dairy milk of your choice in place of whole milk and DF vanilla ice cream, and you’re good to go! 💃

Ingredients

Scale
  • 1 cup Whole Milk
  • 2 cups Vanilla Ice Cream
  • 1 medium Red Apple – cored and diced
  • ¾ cup Lotus Biscoff Spread (either smooth or crunchy will work)
  • ¾ TSP Vanilla Extract
  • Optional: Biscoff spread drizzle (you’ll need an addition ¼ cup of Biscoff Spread), whipped cream, crushed Lotus Biscoff cookies

Instructions

  1. For the Biscoff drizzle (optional): Add ¼ cup Biscoff spread to a small bowl. Heat for 30 seconds in the microwave until melted. Drizzle the melted Biscoff spread around the inside edges of two glasses. (This is easy to do with a squeeze bottle.)
  2. Combine ingredients: Add all of the ingredients into a blender jug. Cover and blend until smooth.
  3. Serve: Pour into two glasses and top with more whipped cream, remaining Biscoff spread drizzle, and crushed Lotus Biscoff cookies if desired. Serve immediately and enjoy!
