Can you believe that we are in 2020 already?! As they say, time flies when you’re having fun. And for me, that fun means cooking and spending time creating in the kitchen. ❤️
Looking back now, this past year has truly been a delicious one! From epic soups and chowders, to tasty Asian stir-fries, to simple and easy weeknight pastas, and of course, plenty of noodles! I hope you’ve enjoyed all the recipes, and have had fun following along! 😊
Now that it’s January and many of us are trying to eat a little healthier given the past few months of indulgence during the holidays, I thought I’d share some of my favorite healthy recipes from the blog with you.
Think cozy and warming Thai curries, hearty soups, quick and flavorful chicken salad sandwiches, easy stir-fries, and even some low-calorie party appetizers for your entertaining needs!
While these recipes may be lighter, cleaner, and nutritious, I haven’t sacrificed (and never will!) on any flavor. I hope you find some delicious cooking inspiration in this list, and enjoy these healthy recipes as much as I do. 🤗

HEALTHY RECIPES FOR JANUARY
EASY THAI GREEN CHICKEN CURRY
A classic creamy Thai curry that’s easy to make on any given weeknight, super fragrant, tasty, and naturally gluten-free and dairy-free! You can customize it and make it vegetarian with tofu if you like, or with your favorite protein (shrimp, beef, pork, etc.)!

Who can resist these life-changing lean and mean spicy chicken meatballs? They’re extremely juicy and moist, great for meal prep (tasty in sandwiches, wraps, or on top of pasta), and a fantastic party appetizer when you toss them in a sticky, sweet and spicy Thai Sweet Chili Peanut Sauce!
GARLICKY BLACK PEPPER & TURMERIC CHICKEN DRUMETTES
Super simple and easy to make, naturally gluten-free, dairy-free, and lighter and healthier than your average chicken wings! These babies are incredibly tasty and a guaranteed game day crowd pleaser! But they’re also great for an easy weeknight dinner when served with some warm steamed rice!
HERBY EGG SALAD TARTINES
Great for lunch or brunch, zingy, and loaded with feel-good bright herbs like mint and dill! They’re quick to make, and will 💯 up your lunch game a notch!
CHILI CHICKEN LETTUCE CUPS
These gorgeous and tasty lettuce cups are perfect for a light lunch, colorful, bright, and incredibly delicious! They’re ready from start to finish in just 35 minutes!
OVEN GRILLED CHICKEN TIKKA DRUMETTES
Chicken drumettes (sans skin) are marinated in a spicy, aromatic, bold flavored, and zesty marinade. They’re then baked in the oven until they’re perfectly crisp on the outside and juicy on the inside. You’ll want to bookmark this one for an easy and lighter game day appetizer! You can also serve it with grilled onion rings, whole wheat naan/brown rice, and a fresh squeeze of lime for a low-maintenance weeknight dinner!
CAULIFLOWER & POTATO INDO-THAI DRY CURRY

It’s lightened-up by shallow frying (instead of deep frying like they do in restaurants) lightly marinated chicken pieces. They’re then tossed with red onion and bell pepper in a mouthwatering ,spicy, slightly tangy and sweet sauce!
SICHUAN SAUCE NOODLES STIR-FRY
And how could I not include a NOODLES (❤️❤️❤️) recipe in this list? This back-pocket stir-fry is great for cleaning out the refrigerator, and super easy to whip up in just 35 minutes! Load it up with whatever veggies and protein you like, and enjoy slurp, slurp, slurp-ing away my friends! 🤗
